The Winemaking

In Burgundy, the "climate" or terroirs are extremely important. The vineyard work is done with the utmost care in accordance with nature (pest management) and weather conditions, with the aim to get perfectly healthy grapes and maturity when harvest. All our grapes are hand picked and transported in boxes to the winery. The fruits are ordered strictly before being picked off at 100% and placed in vats. The manual punching down grapes to extract their colors, aromas, their tannins. Grape must then pass into a horizontal membrane wine press order to obtain the juice very pure and aromatic. Harvest plot is a vintage (as many wines as plots). The vinification is made traditional oak vats for 15 to 20 days. Those casks come from coopers of quality of our region. The breeding that lasts from 14 to 18 months depending on the term, is in our cellars where the temperature and humidity are ideal. The monitoring of the evolution of the wine during aging we will help then decide an optimum time for bottling.

Very often, the wines of Domaine Jean are the subject and are winning awards at various national and international competitions. The medals and diplomas obtained demonstrate the constant to obtain a high-quality production. We proceed mostly direct sales to our customers are warmly welcomed to the field or on the various wine fairs in which we participate. Our wines are present in many wine shops and restaurants in France and parts of Europe.
